I’ve found jersey knits to be super easy and comfy to work with. They’re forgiving for beginners, plus they come in a ton of colors! For mixing palettes, just grab a color wheel and start playing around—it really helps to visualize what goes together. Also, YouTube has a bunch of great tutorials for specific patterns if you get stuck.
